Ibéricos Torreón began its operations over 60 years ago. Right from the outset our company’s objective has been to supply products of the highest quality with the greatest respect for the raw material.
The experience we have gained both in caring for the animals on the dehesa and in the whole of the process of the crafting of our products has allowed us to improve year by year.
All stages of the crafting procedure are carried out with strict quality controls, from the rearing and selection of animals to their slaughtering, production, and curing and this is reflected in our various quality certificates and regulations.
The new quality standard for meat, ham, shoulder, and Iberian cured loin (Royal Decree 4/2014 of 10th January) establishes the characteristics of and regulates the quality, marketing, and labelling requirements for these products with the aim of improving consumer information and strengthening control systems.
The label must contain the sales denomination consisting of the description of the product, the feed given to the animal, and its breed information.
Hams and shoulders will bear a seal of a different colour form each sales denomination: black, red, green, or white.
Black: 100% Iberian Acorn-fed product – Pigs of the Iberian breed 100% fed on acorns and other resources of the dehesa.
Red: Iberian Acorn-fed product – Pigs of the Iberian breed 75% or 50% fed on acorns and other resources of the dehesa.
Green: Iberian Free-range Cereal-fed product – Iberian pigs reared on the dehesa or in the country and fed on dehesa resources and fodder.
White: Iberian Cereal-fed product – Iberian pigs reared on a feedlot and fed on fodder.

IFS FOOD hereby certifies that Ibéricos Torreón Salamanca S.L. complies with the requirements established in the IFS FOOD certificate regarding the slaughtering and cutting up of pigs of the Iberian breed, and the crafting and slicing of cured meat products and salted meats deriving from pigs of white and Iberian breeds.
CALICER certifies that the products of Ibérico Torreón Salamanca S.L. (acorn-fed, free-range cereal-fed and cereal-fed hams, shoulders, and cured loin from 100% Iberian pigs and Iberian pigs) comply with the requirements established by the quality standard for meat, ham, shoulder, and Iberian cured loin.

Ibéricos Torreón Salamanca S.L. has a food safety management system in accordance with Standard ISO 22000 for the slaughtering and cutting up of Iberian pigs and their marketing; and the crafting and slicing of cured meat products and salted meats deriving from pigs.
